兎御殿
On October 23rd, I visited the Naminoto Sake Brewery in Kata, Shiga Prefecture.
The brewery runs a restaurant called Yohkaro, which is open only from June to September when the brewery is not making sake.
The building was renovated from the previous owner's residence, and the location was perfect, with a view of Lake Biwa through the pine trees in the garden ✨.
The third bottle was a sparkling nigori sake✨.
This sake is made from about 20 different varieties of rice grown in Shiga Prefecture.
The mouthfeel is very fizzy and shwashy ✨The rice flavor is also very strong, but the mouthfeel is so smooth and refreshing that you can gobble it up 😅.
It is a refreshing and dangerous sake❗w

The food and sake are wonderful, but I thought the pairing was well thought out as well, starting with the high-end sake, and by the time the funa-zushi was served, the sweetness of the rice with the special pure umami taste softened the acidity of the funa-zushi 😻✨.
