I was told that Senkori is going to do an "Edo gaeri".
I thought the modern series would be gone, but it seems that the entire series, including the classic series, will be gone and all the sake will be made from sake yeast.
The U.A. series will remain, but the taste may change.
I chose Modern Kame-no-o, a representative brand that I had never tried before.
Cold sake
Mild fruity aroma.
Mild, fruity sweetness and acidity
Kame-no-o is different from Aizan in that it has an impressive, elegant sweetness, but it seems to be quite calm.
