Tomikunishiki Junmai Daiginjo Nama Shu (Gin Kasumi)
This is the "Arabashiri" or "orikaraumi" version of the "Haru no ichikkoku" introduced yesterday!
After filling the sake bag with the unrefined sake, the unrefined sake is hung in a tank and only the "drops" that drip down are collected by "Shizuku Shibori", using only natural gravity!
After that, the transparent part that flows out of the sake bag is collected!
Does that change the taste? Some people may wonder if that makes a difference in taste, but when you compare the two, you can definitely taste the difference.
The elegant fragrance is gorgeous, the natural sweetness is gentle and fruity, and the freshly squeezed gas that stimulates the tongue is still present, and the lees-derived flavor is more concentrated.
The finish is clean and not overly floral, making it easy to pair with meals.
