Igarashi is a sake that cannot be bought at the brewery because it is limited to special dealers. We bought it at a place where it takes an hour and a half by car even though the brewery is only a few minutes walk away. LOL!
The aroma of the vinegar isosu reminiscent of a banana. It is an elegant and delicious aroma with a touch of acidity.
The taste is quite thick, but it is moderately ripe and "deep". This is what autumn sake is all about!
The slight bitterness that you feel at the same time is really exquisite, and this is probably the reason why the umami taste is so "deep" that it lingers.
Because of its richness, it is easy to misunderstand that it is quite sweet, but if you taste it carefully, the sweetness is retracted by the strong acidity.
This sourness makes it look like an apple, and it also gives an outline to the flavor.
On the second day, it's a muscat type wine, but it has an interesting balance and is very drinkable.
It's also delicious served cold, but I think apple-like sake is best served cold.
It's somewhat like Miyazumi, and Igarashi is delicious! This autumn sake was an interesting one, with the freshness of direct pumping and the depth of maturity coexisting!
