Sake rice Yamadanishiki
Polishing ratio 70%.
The mouthfeel is like yogurt, but quite sour and sweet. It has a sake strength of -81, a value I have never seen before, and is more like a sour plum wine than a sake. It is quite unique, but quite to my liking. Very tasty.
