This is delicious.
It has a mild, moderate acidity and a bit of bitterness. It is a similar type to my favorite Mucho Tensho Tengumo.
It goes well with soups and soup stock.
Shiitake and maitake mushrooms would also go well.
Guanylic acid and glutamic acid types are good.
Mildly bitter, smouldering A+++.
