The overall impression is clear and crisp, but with a dry umami flavor. When heated, it becomes more pronounced and mildly refreshing.
I'm not a big fan of dry sake, but I'm not sure if it's because there are so many good dry sake, or if I'm just getting used to it, but lately I'm not finding any dry sake that I don't like so much.
I noticed that the sake was being heated in a sake heater around this point, so I decided to taste the heated sake as well.
