I found a sake with a familiar family crest in the "special offer" section. It was Kamikawa Taisetsu, which I bought and enjoyed in Hokkaido the year before last!
I bought it after confirming that it was made in June 2011.
The aroma was fresh with a hint of ginjo.
I took a sip and wondered what it was.
It has a slightly sweet taste with a hint of gas and a bitter taste that is sharp. It is totally different from the last time I drank it. There is no balance of umami and acidity.
There is a little old aroma and taste. I wonder if the umami acidity has turned into the old flavor and the balance of the flavors has gone wrong 😋😋.
