Soten Genshu from Ozawa Sake Brewery. A junmai ginjo with umami and sharpness. It has a slightly fruity sweetness. Soten's sweetness is more pronounced than Sawanoi's. As is typical of Ozawa Sake Brewery, the quality of the water and the cleanness of the sake can be clearly seen. It is more enjoyable to drink by itself than with sake cups.
