I don't have much information, but it seems the rice is Haenuki.
It says it's made from fresh rice, so I'm guessing it's probably once-half-brewed.
Surprisingly fruity and slightly sweet. The second half is sharp and the aftertaste is short. Good balance of sweetness and sharpness.
It is a sake that is both fruity and classic.
It has a melon and grape-like taste, but also a little Japanese sweets-like sweetness.
It is better to drink it at room temperature than chilled.
The dorayaki made with Betsukai butter and Betsukai cheese were delicious 😋.
The cheese tasted great even when torn into small pieces!
