Purchased at a mystery cheese shop.
Sake made from Moeibuki, a new sake rice from Hiroshima.
It seems to be made from Shin Gin Seibai. It has a nice, crisp taste with a trace of sweetness. The acidity and sharpness are impressive. After the sweetness, the bitterness comes quite a bit.
When the temperature rises, it has a strong sense of rice.
