Mitsutake is about 4 years old?
I have the impression that it is more famous for its invitation to the magical world of shochu than sake.
I bought it at Takatsuki Hankyu. Matsuzakaya's liquor department has become Seijo-Ishii, which is a little bit subtle, but I like Hankyu because it still maintains its department store character. Matsuzakaya used to be better because it had more local sake.
It is written as "light nigori," but it is quite cloudy. It has a lactobacillus-like nuance, but the overall taste is clear. As the description says, it is silky and smooth. I don't think it is very Daiginjo-ish.
I think it has more sweetness and acidity than when it was just opened.
It's been 5 days and the yogurtiness is getting stronger.
