Aged sogape that had been dormant We are opening one for the first time in a long time. After much deliberation on what to make, I chose A mixed fermentation of 1/2/3/4/5/6 yeast and natural fungi. The last time I drank it, I had the impression that it was very peculiar. Riasake Naturel This is not a Burgundy type bottle. Miyamanishiki 70% polished rice from Nagano Prefecture, 16% alcohol. The rice field produces a low-protein daiginjo because it is pesticide-free and therefore 1/2 the yield! As soon as the cork is popped I've been waiting for this for a long time. ❗️ The aroma of the traditional sake yeast yeast is wafting out of the mouth of the bottle. wafted out of the mouth of the bottle 😳. Even before pouring it into the glass, it's mmmmmmmm! (on the other hand, there is no ginjo aroma at all😅) I took a sip... This might be a successful aging ❗️ There is no ink-like aroma that I felt last time. As soon as you taste the sweetness and acidity, you will be filled with the rich umami of the sake's yeast yeast. A moment later, the mouth was filled with the profound umami of a traditional sake yeast yeast strain. Oh no! Sogape is different from other sake, but but it is still delicious! Soon Sogape will have new sake! I can't wait for it!

Good evening, Shiri 😃. I was inspired to age 7 bottles at home and opened 5 🤣. I have 2 more bottles waiting to compare with the new sake. I'll do a comparison report in a little while 😉.

I've heard that it's enough to let it sit for at least 6 months, but I'll wait a year and compare it with the new sake 😌.

I started opening it a little over 6 months later, and it seemed very different from when I bought it (as the brewer says: ❗️). I'm looking forward to seeing how it compares to the one year old stuff to see if the difference is more pronounced 😊.
