Junmai Nama Moto from Daishichi Sake Brewery in Fukushima, Japan, is a matured, rich, full-bodied sake for warming, but this is a limited shipment of pure sake that needs to be kept chilled! This one is a limited-edition, must-be-cooled sake! The aroma immediately after sealing seems to be the same as that of the regular version, but once you take a sip, the fresh acidity and the deliciously spicy bitterness mingle together and disappear beautifully. On a hunch, I drank it in a wine glass, which was also a great match! It tastes like a classic modern, clean, slightly dry white wine 😆. It was a fresh yet powerful modern version of Daishichi, different from the usual Daishichi koisho 🥰.
