The one I liked best in the first half of last year was Shinomine Rokumaru Usu Nigori (light nigori). At that time, it was Yamada Nishiki. This year, I thought I would start with this Yuyamanishiki... I wasn't thinking about it, but when I saw it, I bought it immediately lol.
It has a botanical catty aroma of grain, alcohol, and some kind of grass or herbs.
It has a light micro-firing when you drink it, so it is slightly energetic on the palate. It has a very unique flavor with umami, bitterness, and the aforementioned aroma. It is not unpleasant, so you can enjoy it until the end.
After the acidity is felt, the umami is tasted carefully, and the sweetness, which was not visible due to the acidity, appears after the acidity disappears, finishing with the bitterness.
This is interesting! I have often experienced sweetness disappearing with acidity at the end, but I don't think there are many cases where sweetness appears at the end. It is so fresh and innovative that it makes me excited every time I drink it.
I think the sweetness is full-bodied because it is brown sugar-like.
