Our regular work in Takahama, the westernmost town in Fukui, was successfully completed last weekend 🔚.
The work was not finalized until the very last minute, so it was a rush job with a flurry of plan revisions and preparations, and I'm surprised it took shape.
This time, let's launch alone with sake from the only sake brewery in the Obama area, which includes Takahama Town 🍶.
Wakasa Junmai Ginjo.

The aroma of rice is a little like melon, and the sweetness and umami that flows into the mouth smoothly and smoothly, followed by a shallow, sweet aftertaste.
[Mokkiri]
A faintly sweet rice aroma, a refreshing sweetness, followed by a mineral umami that quickly develops and finishes with a sweet aftertaste and a slightly characteristic rice aroma that escapes through the nose.
Since there was no good fish due to the heavy snowfall, we had motsu nabe (motsu hot pot) using Ippudo's hot pot soup, and sipped sake while watching the snow fall in the garden. ☃️🍶
When Wakasa Fuji, which originally brewed Wakasa, withdrew from the sake brewing business, the current Obama Sake Brewery was established under the slogan "Never run out of local sake".
Recently, the brewery has been brewing ambitious sake, such as the Junmai Daiginjo "Pentagram," a junmai daiginjo that was brewed in reference to the Yin-Yang calendar and is associated with the land that has deep ties to Abe no Seimei.
