There is a slight green apple-like overtone at the back of the rice malt.
The same aroma as the topping, rather firm rice flavor and soft sweetness spreads pichijuwatto with apple-like acidity, leaving a lingering sweetness and a mildly bitter, sharp finish.
The umami of rice can be felt well for its 13% alcohol content, but the acidity that rises from the mid-part of the bottle and the bitterness of the second half give it a refreshing impression. It goes well with meals and is also delicious on its own.
It went well with a recipe from "Boys' Gohan" (a Japanese cooking program for men): braised sea bream, stewed beef tendon, octopus macaroni salad, and oyster and egg soup.
It also went well with the mysterious salami that Mr. Funau, a mountain guide, gave me as a souvenir from Chamonix.
