This is Yamori, Ki Shikkuri No. 6 Junmai Nakadori Unadjusted Nama Shu (Toshimaya Shuzo/Higashimurayama City, Tokyo). Yamori is read as "Okunokami", but there is a picture of a gecko 🦎 on the back etiquette and it is called Yamori 😅. Yamori is a limited distribution sake named after the brewer's desire to keep brewing works that would protect the Toshimaya Sake Brewery and the prosperity of sake retailers and food and beverage outlets. It is brewed in a small brewing process that emphasizes manual labor to the utmost, with the concept of "aromatic and gentle flavor," and is brewed without adjustment (no filtration or water added) and stored entirely in bottles. The sake rice used is basically Hachitan-Nishiki, the pride of Hiroshima. Ki" is also made from 100% Hachitan-Nishiki, and the rice polishing ratio is 55%. The appearance is clear crystal. The aroma is gentle, but fresh and juicy melon with subtle nuances of koshinko. The juicy sweetness and acidity spread smoothly as soon as it enters the mouth, and the taste is quite bitter running from the mid-palate. I had the impression that Hachitan-nishiki is usually a crisp sake like Gohyakumangoku or Miyamanishiki, so I was surprised that the taste was quite strong 😳. It is quite juicy and good, but if you don't like bitterness, the bitterness in the second half may bother you a little. Yamori, I will try other drinks in the future.
