Yamazan is gaining in popularity right now.
This sake is from a dormant brewery that has been revived, and we expect it to be popular for its taste❕.
So, how does it taste?
When I stirred it and poured it into a glass, I got the impression that it was silky and cloudy, or rather, lees were precipitated and it tasted like lees 🙂.
Fruity aroma, fresh and gassy 🎵😍🎵.
Sweetness is followed by a slight bitterness and sourness, with a fruity green apple flavor that I can see why it's so popular 😃.
It's similar to "Shinshu Kamerei" maybe because it's made from Hitogochi rice 😋.
I'm glad my local liquor store is carrying it as I've heard it may be hard to find from now on 😆.

I'm going to try some of Yamazan's various sake rices now that they are available.
It is relatively easy to get now, but I wonder if it will become more popular in the future and there will be restrictions on purchasing it 😟.
