Michinomukou Special Junmai
This is a sparkling special junmai sake with secondary fermentation in the bottle. It seems to have been created as a project to protect the satoyama.
It was shwashy and sweeter than expected. I like it a lot.
I've never seen it before, but basically you can only buy it at the brewery or online store.
Nigori Sake Nama Sake
Active type of nama-zake. It's not spicy, but has a guttural taste. I think it is much sweeter than when I drank it before.
Tokusen Hozenshu
I thought it was a versatile type that can be drunk at room temperature or heated.
The toji said that he only has one bottle, but if you want to heat it up, he recommends the kamisen.
Special Junmai Hiyoroshi
It is delicious at room temperature, but when heated up, the beautiful acidity comes out and it is really tasty. I was surprised at how much the taste changed!
I was hesitant to choose the Junmai Daiginjo Nama Sake.
It was the sake that surprised me the most with the difference in taste.
If there is any left after the new year, I want some Michinomukou 🤔.
