Hokushinryu Kinmon-nishiki
I think Kinmon-nishiki's presence has waned since Yamae-nishiki came out, but I think it was produced only in Kijimadaira? However, it is a rare sake rice produced only in Kijimadaira, so it is still used in the lines that put a lot of effort into it (maybe).
It is a dry sake with moderate acidity and a low sweetness!
