Bought this sake in October. It is a junmai ginjo with a rice polishing ratio of 55%, using Yamadanishiki for the koji rice and Gohyakumangoku for the kake rice. The aroma is melon melon-like and mellow. The mouthfeel is mellow and full, and the sweetness and umami of the rice overflow into the mouth. It is not too sweet, but very elegant, like the acidity of grapes. It has a sharp and spicy throat and stimulates the back of the throat. A well-balanced sake, it was delicious. Today, I made an earthenware pot full of stir-fried mustard greens and sakura shrimps.

Good evening. I know this is a different comment from your post, but I think the change in Sawaya Matsumamoto's toji has made it harder to buy the sake. If it's the kind of sake you like, you should take action as soon as possible. I'm going to buy some tomorrow too.
