We obtained a bottle of Jikin, which is known as a difficult brand to obtain, at a point of sale. This sake is derived from the words of Dogen, the founder of the Soto sect of Buddhism, "Live this moment carefully," which are written on the label, but they were gone in an instant. The aroma is mellow and fresh, characteristic of Yamada-Nishiki. The aroma is gorgeous and sometimes smells like cooked rice.
It is fruity and has a perfect balance of sweetness and acidity. Even when it is a fire-aged sake, it has a freshness like that of a freshly brewed sake. The aftertaste of sweetness is wonderful without getting tired of drinking! The taste is clear and irreplaceable. It was a great moment...delicious 😋.
