It has a slightly sweet and sour balance that is more modern, and is delicious with a meal or on its own. It goes well with a Japanese dish of sweet potato (silky sweet) and blue cheese (Hanabatake Farm's Blue Cheese Camembert), which the staff at Sake-no-Wa showed us how to make.
