I bought a bottle of the raw version because the hi-airi version I drank before was so good. It is a junmai ginjo, I believe, although it is not written on the bottle.
It has a strong gassy feeling and tastes like yogurt or lactobacillus drink. I can also taste the sweetness and umami of the rice.
I had an image of sweet and sour taste from the hi-ire version I drank before, but the impression is quite different when it's drafted. This one is just as good as the others, though.
It tastes better after 2 days.
Sake made with LED yeast, like Gotenzakura, often uses blue bottles, right?
