For various reasons, I have decided to quit drinking alcohol at the end of July, and I wanted to drink Etsukaijin at any cost before that. First of all, I drank it as it is. It is similar to the Gunma Izumi Yamahai that I drank before, but the flavor is amazing. It has a very nice nutty flavor. I drank it warmed, even though it was in the middle of summer. The savory nuttiness expands as it is warmed, and the sweetness and acidity spread. I'm not allowed to drink it until winter, so I'm going to let it sit in the fridge.

Thank you Jay & Nobby for your comments. On a personal note, I am abstaining from alcohol because we are expecting our second child. It is truly a discipline. I'm looking forward to aging the half leftover Kame-no-o and the Etsukaijin Omachi that I bought with it in the fridge.
