When opened
Almost no gas
Slightly sweet alcohol on top
Fruity aroma like white grapes, a hint of sweetness, and rice flavor, spreading crisply over a relatively firm acidity, with a slight spiciness and bitterness from the alcohol.
Overall, it is light and refreshing, more like a mealtime sake than a stand-alone sake.
On the second day, the umami and bitterness increase and the balance is even better.
It went well with grilled mackerel, grilled clams with butter, and chilled tofu.
It also went well with grated yam and rice, and grilled Meiho ham that I bought at the Mie San-in Fair at Aeon.
It also went well with Sou no Tropical Fruit.
