I was looking for a nigori shuwashu and chose this one that I was curious about 👀.
They usually brew with Yume-Ichiken sake rice, but this year they brewed with Shunyo 🤔.
The nose has a greenish aroma of muscat and herbs, which is typical of Shunyo.
The overt aroma also has a strong muscat aroma.
The sweetness is moderate, the acidity, umami, and gasiness are strong.
The bitterness at the end was a bit strong and it was a clear dry sake like Mitsui no Kotobuki 😊.
I had an image that nigori shuwashu was sweet, but it was a good encounter that made me think dry active nigori is not so bad 👍
