It is an unfiltered, unpasteurized, raw sake made from the 2025 harvest of new rice Hitogochi.
It is the first new sake from Daishinshu, brewed with 49% polished Hitogokochi rice. How will it turn out this year?
It has a gorgeous muscat-like aroma and a freshly pressed gasiness. The silky touch, carefully squeezed in a vat, expands its fruity sweetness and mellow flavor. It is consistently fresh, even down to the refreshing bitterness of the aftertaste.
This year, too, the taste is unmistakably delicious!
