The Miura Sake Brewery, located in Hirosaki City, is famous for its representative brand, Toyobai. It is famous for its trademarked Toyobai rice, and this is the only brewery that uses it. The Miura brothers are the chief brewers.
The person who helped me was from the Toyobai brewery, and he told me about Toyobai rice.
◉Toyobai Junmai Ginjo
The balance of sweetness and umami in this sake is very nice and refreshing.
◉Toyobai Special Junmai
The first sake I had was a very clear but well balanced Junmai Junmai. The balance between sweetness and umami is very well balanced.
Not all Toyobai sake is made exclusively from Toyobai rice, but other rice is used as well. Toyobai rice is a relatively easy variety to grow, but since there is no producer and they grow it themselves, they can't make all of their sake with Toyobai rice.
He said that the recent rice riots have reduced the number of sake rice growers, so next year's harvest and prices will be tough, so the price of sake will probably go up as well.
