I came back to this restaurant again. It has an attractive sake lineup (photo #4).
The first sake is "Hiran". It is light nigori.
It is fresh and has a soft orikiri (rice curd) taste. It finishes with a crisp acidity that is more citrusy than yeast yeast yeast.
It is easy to drink and you would not believe it is a low-alcohol, unfiltered, raw sake made from a traditional sake yeast yeast.
