The rice is polished to 60% and this special junmai has a refreshing aroma and sharpness while retaining the flavor of the rice. While the regular Kurei is dry with a sake strength of about +5, this is a +9 nama-zake. Nama sake is brewed in early spring.
The sake is matured at low temperature for six months until the flavor settles down.
