It's a Cho Gen S, so it's Yamae Nishiki. I started with a cold sake.
The aroma is definitely sake, but it's quite refreshing for a very low polished sake. The taste of the rice is delicious and expands.
It's raw sake, but I'll try the brewery's recommended hot sake later.
I've been drinking a lot of sweet fruity sake lately, and while this isn't in that vein, it's a very refined sake.

All kinds of flavors swell up. The softness has increased. It's a nice, salty, unstoppable hot sake.
