Overall 10 (out of 10) I give it 10 points with a strong guess by Peckho. According to Imanishi Shuzo's website, they brew sake with the desire to express the history, culture, and climate (water and rice) produced there. You can strongly sense the flavor of the rice. Yet the sweetness is moderately restrained. The lingering taste is similar to that of yesterday's Hourai, with a slight astringency. However, the flavors are completely different and I am always surprised at the depth of sake that can produce so many characteristics with rice and water as the main ingredients. Hourai has a freshness, while today's Mimurosugi has a warmth. I had it chilled. The image of the aroma that I felt  -Aroma: Aroma of rice with umami flavor.  -Aroma: The taste is astringent, but the aroma is still slightly umami. The higher the number, the stronger the aroma (5). The higher the number, the stronger the aroma (5 is the maximum)  -Spiciness: 0 at the beginning → 0 in the aftertaste  -Sweetness: 1 at the beginning → 0 in the aftertaste  -Sourness: 0 at the beginning → 0 in the aftertaste  -Bitterness: 0 at the beginning → 0 lingering 0  -Astringency: 1 at the beginning → 3 in the aftertaste  -Rice flavor: 3 at the beginning → 2 in the aftertaste Mouthfeel I felt】→3 Smaller number = light and smooth Bigger number = thicker and richer (5 is the maximum)

Jay & Nobby! Good evening...I really felt like I liked this drink. The label is also austere! Last night we decided we wanted to drink it again tomorrow, so we corked the bottle with a little left over and finished it today! It is still delicious. I also like it with yuzu kosho and sansho 👍😍.
