With all the recent releases from Kitanishi Brewery, our fridge is already full. We want to empty the fridge as soon as possible, so we're going to open each bottle carefully without comparing them.
First up is a Junmai Ginjo nama-shu called Ao Sai Rai.
The aroma is slightly lactic acid and berry-like. The nose is a bit gassy. There is a slight sense of gas.
Both sweetness and sourness are strong. The sourness is slightly more dominant.
The sourness lasts until the aftertaste, which changes to bitterness at the end.
The taste is full of ups and downs. It is unexpectedly spiky. I was expecting a strong gaseous and lactic acidic taste typical of Sairai, but I think this is better.
Next time, I'm planning to try the Sai Rai with ribbon.
