This time we were served Daijiro by Hata Shuzo.
The sake is named after the brewery and made with Ginbukiyo, a variety of sake grown by a group of Hata Shuzo contractors called Tonhyakusyo no Kai, and is a heartfelt sake from the brewery's heart.
The sake had a strong flavor with a hint of acidity and umami. I am sorry that I am not yet good enough to describe the taste.
