Hachitan Nishiki is my personal Chiebijin No.1or2! At first, the taste is a bit limpid, with a delicious, chili-like flavor. As the temperature rises, the umami becomes stronger and the sense of raw ripeness increases. It is as good as bonito tataki (bonito with a delicious flavor). It is a happy deliciousness.

I've only had Chiebijin Aizan, so I'm sure Hachitan Nishiki must be delicious too 😋.

The other one is Junmai Daiginjo Comet, which is shipped at the end of the year. I think it is one of the most spectacular of the Chiebijin. It is becoming a firm part of our family's New Year's sake 😁.
