Shinshu Kirei純米吟醸 美山錦 無濾過生原酒

This is a one year old 5BY Shinshu Kamerei Miyamanishiki (🙄) given to me by my boss.
The top nose has a slight hint of maturity with a hint of hiney.
Subtle aroma like a step before caramel 🤔.
In the mouth, the gassiness is gone, but the chili-chili-chili-chili-chili-chili-chili-chili-chili acidity is still there.
The taste is mildly sweet and delicious with good flavor.
According to @Mizuhashi-san, a Shinshu Kamerei nakasekashi, it is easy to get a sense of hine when aged for a long time 🤔.
By the way, this year, Shinshu Kamerei's 1sho bottles are now fire-aged, is that something to be concerned about? I would like to ask the brewer 🤔.
