Yizuisuishin Yamane Honten in Mihara, Hiroshima is a sake brewery that brews traditional Hiroshima sake, "dry but sweet", with soft water.
This sake is a limited edition sake for retailers, which is shipped rapidly cooled after fire-quenching at the time of bottling.
Today, unusually, we paired it with sashimi and hot sake.
First, the cold sake.
The appearance is a warm clear crystal.
The aroma has a gentle sweetness and acidity with hints of rice and koji, as well as the coolness of alcohol.
It starts with a refreshing, gentle rice sweetness, followed by a rounded acidity that spreads and finishes with a sharp finish.
The whole wine is accompanied by nuances of koji sweetness and acidity, and is round and soft, a crisp dry wine with a flavor different from Niigata's light dry wine.
The koji nuances also went well with the sashimi.
Warmed sake was served in the top and lukewarm temperatures.
The aroma has a darker sweetness and koji taste than the cold sake, adding a sense of rice and alcohol.
The taste is mellow and firm without being cloying, with a full-bodied rice sweetness and umami flavor, followed by a sharp acidity that finishes off with a soft finish.
It is a perfect match for the sweetly seasoned dishes of western Japan. I paired it with Kansai-style oden, which has an unbearably sweet flavor with dashi broth, and to put it mildly, it is the best 🥰.
I usually drink sake by itself, but pairings are important too ☺️
