The water used for "Minami" is subsoil water from the Yasuda River that flows near the Minami Sake Brewery.
I asked for it as soon as I heard it was a Kochi sake🍶!

It has a clean aftertaste, but not too crisp.

While letting the mackerel taste stand up, the clean aftertaste cleans up the greenish taste of the mackerel. The balance between the two is good! It is a behind-the-scenes powerhouse that enhances the natural taste of the mackerel while bringing out its best.
It does not go well with meat...lol
