Higashitsuru is a brewery that I personally highly recommend. It has a sweet, yet refreshing taste, and is never a disappointment. This time, a bottle was made using rice called Shunyo. Shunyo is a low-protein rice that produces a light sake.
When you open the bottle, you can feel the healthy carbonation, but when you drink it, you can taste the refreshing sweetness of lychee and muscat. However, it is a refreshing drink without being too sweet.
Maybe it goes well with white fish or other refreshing dishes. Among the recent sakes I have had, this one is my favorite.
