I can't believe it has already been more than a year since I first drank Ikubou last year. Time flies... I was told by the liquor store I usually go to that it is better to leave the bottle open after opening it, so I opened it last weekend and had it in the fridge 🍶. It has a sweetness like ripe peaches and a sour top note like yogurt. Sweet and mellow. The acidity is not noticeable for Kouei Chrysanthemum, but it is also refreshing. There is no cloying taste. It was already delicious right after the bottle was opened, but after leaving the bottle open, the sharp taste of alcohol was gone, giving the impression that it became milder. I used to drink Kouei Kiku thinking I liked Sunburst, but this sake was so good that it made me think I'll go for Ikubou from now on☺️I think I'll buy a bottle if there are still some left 🤤.
