Another one today, Katano Sakura, which I had not recorded.
It is a 10 year old Yamahai Junmai Daiginjo called Emu.
I happened to get this at an event, and it is a very rare sake from Katanozakura.
The aroma is sweet and nutty.
The taste is robust, as is typical of Katanozakura.
The sweetness, nutty aroma, and milky acidity of Yamahai are all mixed together to create a full and complex flavor.
It is a taste that is addictive. Super ripe and delicious!
When heated up, the sweetness and bitterness of this sake is even more pronounced and delicious.
When I uploaded this, I accidentally deleted last week's review of Takachiyot's super-premium Takagui 😱.
Was that a phantom of unagidani?
