The rule of "no miss in special junmai" is well known in the sake brewing world, and I was looking forward to this special junmai from Kirizukuba. I was looking forward to this special junmai from Kiri-Tsukuba. The comment on the brewery's website is very apt and I quote It is our standard sake that can be enjoyed at any temperature. It has a light, dry taste with a hint of rice flavor. If we were to talk about ramen, it would be salt ramen with a clear broth. I don't have many words to add, It is fire-brewed but unfiltered, and the orizumi (a hint of ooze) is still present. Special Junmai Kirizukuba Only carefully selected rice suitable for sake brewing (Gohyakumangoku) is used, polished to 55%, and brewed with Ogawa yeast. It is our standard sake, which can be enjoyed cold, chilled, or warmed. It is not flashy, but it is a sake with a light, dry taste that brings out the flavor of the rice. In terms of ramen, it is a salt ramen with a clear soup. It has a light, dry taste that does not interfere with the flavor or aroma of the food, making it a sake that can be drunk slowly and forever.

Good evening, Mr. Manachy😊. I learned about Kirizukuba through Manachie's post and am enjoying it including Urasato. Although Urasato is softer and smarter, but the Kiri-Tsukuba has a nice flavor again👍.
