The Mimuro Cedar Roman Series, which has been laying around for a while. This is the first time to drink this series. I like sake from Nara, so my expectations were high. It is a fire-aged sake with an alcohol content of 13%. Polishing ratio is 60%. This sake is brewed with Watafune No. 2. When the bottle is opened, the aroma is soft and sweet, with a hint of white peach. In the mouth, the first thing you notice is the soft texture. The juiciness and umami spread in the mouth afterwards. The acidity is more like a slight bitterness of alcohol when it is being poured down the throat, tightening the flavor. Is this umami the Watabune No. 2 😄? While the taste is different from that of the wooden oke Bodai yeast, I found it to be flavorful and easy to drink. It is delicious 🍶 even when drunk at this time of year.
