A bottle with a label that just clicked with me.
As a follower of the blue giant star, I can't help but reach for it when I see blue on the label.
First, let's start with the supernatant.
The citrus-like scent of the upper part of the bottle is fresh and crisp! It is light, sweet and acidic, and I wondered whether I should continue drinking it, but decided against it because I didn't want only the lees to be left at the end.
The next one is "orikarami" (orizumi).
Although the aroma is weaker, the light and lively sweet and acidic aroma is quickly followed by umami and richness, and the flavor becomes thicker. The acid bitterness at the end is also clear and lingers for a long time. It is very satisfying.
Try heating it to normal temperature.
The aroma of slightly cooked rice and the balance of sweetness, umami, acidity, and bitterness are good! Delicious! There is also a little piquancy left.
It's a good balance of sweetness, umami, acidity, and bitterness! I had a hard time deciding between this and Kaiun's Omachi, but both were probably the right choice.
