I decided to go ahead and drink the souvenir sake as my stock has grown with Aizu souvenirs. This time it was a local sake from Laughing Shiki, bought at Hikone Castle! I still can't forget how the label was so simple that it caught me off guard 👁. When I opened the bottle and poured it, the aroma was gentle and full of rice. The rice polishing ratio is 60%, so it has a beautiful, almost ginjo-style aroma. The mouthfeel is soft. It has a delicious taste of rice, a slight sweetness, and a sourness that gradually spreads. It has a flavor like mature sake, soft but with a lot of depth. The transition from the umami to the crisp acidity and light sharpness is just the right amount for everyday use, and it is so delicious that we can only imagine how good it would be if it were heated up! It's already been half a year since I went there when the cherry blossoms were just starting to bloom. Time flies by so fast 🫣.
