Shippo is... a series of raw sake made with local Hyogo's Hyogo-kitanishiki, which started in 2019. Shippo refers to the seven treasures described in Buddhist scriptures, and the label is decorated with a Shippo pattern. For Sanyo Bai Shuzo, which insists on using local rice, "Hyogo-Kitanishiki," the most commonly used rice, is the one they are most attached to. The cloisonne pattern, which is a chain of circles, is an auspicious pattern that expresses human connections. After experiencing a major fire at the brewery, the new series "Shippo" expresses the joy of brewing sake and our gratitude to the local community, the people involved in rice cultivation, and the drinkers who love Banshu Issen.
