Surprisingly, it is rice.
Fruity acidity and umami, but rice flavor.
Smooth mouthfeel, light but mellow flavor.
Aromatic aroma like coconut and caramel.
This is characteristic. Very good.
It is delicious on its own, but I am not sure what I would pair it with if it were a meal.
By the way, I think it would clash with anglerfish.
