We finished the "Tasting Aged Nama-Shu" with the seventh and final sake, the 2019BY Nabeshima New Moon, which has been aged for about four years! But then the 2021BY Nabeshima New Moon was opened in front of us! We had to compare them, so here is the last one! What is the difference between 4 years old and 2 years old 🤔. This one is a Yongo bottle, which a liquor store in Fukuoka aged for 2 years before selling 😳. Appearance is clear crystal. The aroma is even shallower and lighter than the light aged aroma that I got from the 4 year old, and the clean fresh fruity ginjo aroma is not much different. The mouthfeel and taste are basically the same, but compared to the 4-year aging, the sweetness, acidity, and umami elements are more easily felt independently of each other 🤔. The nuttiness of the aftertaste and the hints of incense that was strongly felt in the 4-year aged version has gone into the shadows, and along with the nuance of astringency in the aftertaste, you can only slightly sense the presence of nuts in the distance. I think the 2 year old is more easily to feel the original aroma and flavor as the overall sense of maturity is shallower. Since I drank the 4 year old and 2 year old, I wanted to try the R5BY Nabeshima New Moon 😄 I hope I can buy it 😅. I hope I can buy it😅 Thanks for the real treat this time 🍶.
